Fluffy Chocolate sponge pancake baked Skillet

This time I will be introducing a menu in season 8, episode 4 of the Solitary Gourmet series.
It is an arrangement of Comma Coffee’s “Chocolate sponge pancake”.
The delicious taste of the fluffy dough and the melted ganache baked with the skillet is irresistible.

[Ingredients]
■Ganache (12x18cm 1 serves 2 people)
・Chocoalte(Equatoriale 55%):100g
・Heavy cream 35%:50ml
・Honey:15g
・Unsalted butter:10g

1. Set the cooking sheet in the mold
2. Chop the chocolate
3. Combine the fresh cream and honey and boil
4. Put boiled cream in chocolate and leave it for a while
5. Melt the chocolate and emulsify (mix well)
6. Emulsify well and when the temperature reaches around 40℃, add butter and dissolve.
7. Pour into a mold, then put them into a tapper, and solidify in the refrigerator

■Sponge Pancake(15cm スキレット1枚分)
・Whole egg: 2pcs(Separate the egg yolk and egg white)
・Granulated sugar:40g
・Milk:30ml
・Cacao Powder:5g
・Bread flour:40g
・Baking powder:2g
・Powdered sugar(use for sprinkling)、Mint、Chocolate syrup etc

1. Spread oil around the skillet (Canola oil or salad oil is OK)
2. Separate the egg yolk and egg white
3. Mix egg yolk and granulated sugar(No need to blanchir)
4. Add milk and mix
5. Sift the bread flour and baking powder
6. Make the meringue by loosening the egg white and adding granulated sugar gradually.
7. Mix meringue with egg yolk dough and gently mix.
8. Preheat oven to 180℃ and bake for 9-10 minutes first
9. When the surface is a little hardened, make a cross mark cut in the middle and bake again for 10 minutes (total 20 mins)
10. Unify the bulge while changing direction
11. When it is baked, drop it from a high point to create impact, this prevents it from deflating
12. Add powdered sugar from above, cut the ganache, add chocolate syrup, and add mint then it’s done!
