Tapioca pearls milk tea cream Taiyaki

■Milk tea custard cream
Egg yolk:60g
Granulated sugar:40g
Flour:20g
Milk:200ml
Assam tea:8g
Condensed milk:30g
Unsalted butter:10g

[Instructions]
1. Melt the egg yolk, add granulated sugar and mix until it turns white (blanchir)
2. Add flour to the egg yolk and mix lightly.
3. Warm the milk, add tea leaves just before boiling and simmer a little for 1-2 minutes.
4. Drain the tea leaf with a strainer in a bowl and remove.
5. Divide 4 into 2 and mix several times.
6. Return to the pot and cook over medium heat.
7. When it starts to solidify, mix intensely.
8. When it gets heavier and lighter, that is the standard for cooking.
9. Add butter and condensed milk, mix and cool.

■Black Tapioca
1.Heat while stirring for 2 minutes with boiling water at a volume of 4-5 times that of tapioca pearl.
2. Then stir for 20 minutes on medium heat.
3. Turn off the heat, cover the pan and steam for about 30 minutes.
4. Chill the steamed tapioca pearls in the colander and cool it with cold water until the core cools.
5. Mix the custard cream and tapioca together.
6. If the cream gets hard, add additional condensed milk(30g〜)
7. Do not mix too much, as the starchy substance moves to the cream and becomes hard when the black tapioca and cream are mixed too hard.

[Ingredients] Approximately 8 pcs
■Taiyaki dough
A- Flour:180g
A- Baking soda:7g
A- White sugar:20g
A- Salt:1g
A- Cocoa powder:12g
Whole egg:60g
Water:150ml
Milk:100ml

1. Combine A and mix。
2. First, add half of water and milk in 1 and mix well, then add the remaining portions when the lumps are gone.
